Fats are some of the most basic raw materials used to create new life. The brain is a big lump of fat (around 60%) so there is plenty of reason to think about the fats that we eat. There is growing evidence that consumption of the wrong types of fats causes epigenetic change in humans that can affect our mental as well as physical health. Farmers are the producers of fats of all kinds, so as the primary producers we should have some knowledge of what we are doing. Yet the general state of knowledge about what is a good or bad fat, and why, is still a mystery to most people.
